Vegan Banh Mi with Lion’s Mane Mushroom Recipe:

Ingredients:

  1. 4 mini baguettes
  2. 1 cup of sliced lion’s mane mushrooms
  3. 2 carrots, grated
  4. 1/2 cucumber, sliced
  5. 1/4 cup of cilantro, chopped
  6. 1 jalapeno pepper, sliced
  7. 1/4 cup of vegan mayonnaise
  8. 2 tablespoons of soy sauce
  9. 2 tablespoons of maple syrup
  10. 1 tablespoon of sesame oil
  11. 1 tablespoon of rice vinegar
  12. Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350°F. Slice the mini baguettes lengthwise, and place them on a baking sheet. Bake for 5-7 minutes, or until the bread is crispy on the outside and soft on the inside.
  2. In a skillet over medium heat, add the sliced lion’s mane mushrooms and cook for 5-7 minutes, or until tender and lightly browned. Season with salt and pepper, to taste.
  3. In a small bowl, whisk together the vegan mayonnaise, soy sauce, maple syrup, sesame oil, and rice vinegar until well combined.
  4. To assemble the sandwiches, spread the mayo mixture on one side of the baguettes, and add the cooked lion’s mane mushrooms, grated carrots, sliced cucumber, chopped cilantro, and sliced jalapeno pepper. Repeat for the remaining sandwiches.

Serve the vegan Banh Mi sandwiches immediately, and enjoy!
