Ingredients:
- 1 8-ounce package of lion’s mane mushrooms
- 1/4 cup diced onion
- 1/4 cup diced celery
- 1/4 cup panko breadcrumbs
- 2 tablespoons vegan mayonnaise
- 1 teaspoon Old Bay seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:
- Finely chop the lion’s mane mushrooms and place them in a large bowl.
- Add the diced onion, celery, breadcrumbs, vegan mayonnaise, Old Bay seasoning, garlic powder, paprika, salt and pepper to the bowl and mix until combined.
- Form the mixture into six evenly sized patties.
- Heat the olive oil in a large skillet over medium heat.
- Add the patties to the skillet and cook for 4-5 minutes per side, or until golden brown.
