  • 1 8-ounce package of lion’s mane mushrooms
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons vegan mayonnaise
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil


  • Large bowl
  • Large skillet
  • Spatula


  1. Finely chop the lion’s mane mushrooms and place them in a large bowl.
  2.  Add the diced onion, celery, breadcrumbs, vegan mayonnaise, Old Bay seasoning, garlic powder, paprika, salt and pepper to the bowl and mix until combined.
  3. Form the mixture into six evenly sized patties.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the patties to the skillet and cook for 4-5 minutes per side, or until golden brown.
