Vegan Mushroom Club Sandwich Recipe

Ingredients:

  • 2 large lion’s mane mushrooms (as a substitute for chicken breast)
  • 4 clusters of pink oyster mushrooms
  • 1 teaspoon smoked paprika
  • 6 slices of your preferred bread (whole grain, sourdough, gluten-free, etc.)
  • 2 tablespoons vegan mayonnaise
  • 4 lettuce leaves, rinsed and patted dry
  • 1 tomato, thinly sliced
  • Salt and black pepper, to taste
  • Vegan butter or olive oil, for toasting bread (optional)

Instructions:

  1. Prepare the Lion’s Mane Mushrooms:

    • Slice the lion’s mane mushrooms into 1/2-inch thick slices.
    • Heat a little olive oil in a medium skillet over medium heat. Add the lion’s mane mushroom slices, season with salt and black pepper, and cook for about 3-4 minutes on each side, or until they are golden brown and tender. Set aside.
  2. Prepare the Pink Oyster Mushrooms:

    • Separate the pink oyster mushroom clusters into individual strips.
    • Toss the mushrooms with smoked paprika, a pinch of salt, and a drizzle of olive oil.
    • In the same skillet or a new one, cook the pink oyster mushrooms over medium heat until they become crispy, about 3-4 minutes on each side. Set aside.
  3. Prepare the Bread:

    • Optionally, lightly spread vegan butter or olive oil on both sides of the bread slices.
    • In a clean skillet or on a griddle, toast the bread slices over medium heat until they are golden brown on both sides.
  4. Assemble the Sandwich:

    • Spread a thin layer of vegan mayonnaise on one side of each toasted bread slice.
    • To assemble the first layer, place one slice of bread, mayo side up, on a clean work surface, then add a layer of lettuce, followed by slices of lion’s mane mushrooms, and a slice of tomato.
    • Top with a second slice of bread, mayo side down. Spread vegan mayonnaise on the other side of this bread slice (facing up), then add a layer of pink oyster mushrooms.
    • Top with another layer of lettuce and tomato.
    • Finish with a third slice of bread, mayo side down.
  5. Serve:

    • Use a serrated knife to cut the sandwich diagonally into quarters.
    • Secure each quarter with a toothpick, and serve immediately.
