• 2 cups of sliced portobello mushrooms
  • 1/4 cup tamari sauce
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

  1. Preheat oven to 375 degrees F. Grease a baking sheet with nonstick spray or line it with parchment paper.
  2. In a food processor, pulse the mushrooms until they are broken down into small pieces (about the size of ground beef). Alternatively, you can finely chop them by hand if you dont have a food processor.
  3. In a large bowl, mix together the mushrooms, tamari sauce, olive oil, smoked paprika and garlic powder.
  4. Spread the mixture onto the baking sheet in an even layer.
  5. Bake for about 25 minutes or until the mushrooms are slightly crispy on the outside but still juicy inside.
  6. Serve with your favorite vegan sides such as roasted vegetables or a salad!

“A masterpiece. The Fantastic Fungi Community Cookbook is, by far, the best culinary guide to cooking and pairing mushrooms. . . . This book makes me so hungry, I want to eat it.”
